For everyday driving I keep it in D and use the paddles to drop it if I need extra power to overtake. If I'm having fun I put into S and even Cupra mode once in a while. I generally let the car take care of the changes, but if I do go manual I always use the paddles.
Cupra & M mode with paddles all the time after doing the same for 3 years in an A45 - it just becomes an "automatic" process. No need to manually change down when slowing up or coming to a halt as it's still auto. Cupra & Sport then leaving the box to do changes is annoying as it hangs on to revs for far too long in some gears.
What do you mean? If you are braking before a turn for example, you have to downshift from the paddles in order to benefit from the engine brake and then exit the turn with enough power available... You probably mean that when you stop it goes automatically down in M1?

I've found that sport mode in the DSG is fairly good at downshifting for corners at the appropriate time. It sometimes gets confused whether to hold a gear or upshift.

The change point in Cupra M mode is 1200 rpm when a shift down will occur. I may be in M mode, but I don't want to constantly charge around like I'm on the Ring.
