Apologies if this has been done before, but searching only turned up stuff about remaps and power type things, and I've already got enough horses trapped under the bonnet for my tastes.

What stuff should I declare to an insurer? Right now my car is (AFAIK) completely standard, but I'm planning to do some handling mods (lowering, ARBs, bushings, that kind of thing), and maybe the exhaust for a bit of a nicer noise. Do I need to worry about telling my insurer about that?

The proper answer is yes you should declare everything you have listed there, if you need to claim they can reject your claim if you have undeclared modifications

Whether everyone actually does or not ................... is another story

Basically if you crash and you have any of those mods undeclared.... your insurer can decide not to pay out because you've not declared them so can void your insurance.

Thanks guys. Seems my insurer would of course use it as an excuse to extract a bit more cash, but not to a ridiculous extent. I'm not going to be a hardcore modder anyway, so I'll just tell them everything and be done with it.
