Got the 1.6 in my ibiza, I have noticed a few changes which I will try to explain.

1. Under very light throttle initially, the engine judders a little more as if it down not know what to do, more obvious with cruise control over hills.
2. The throttle response seems sharper in mine, floor it and it picks up better, it used to suffer from rev hang abit, that is gone and as soon as you come off the pedal, it slows down, slightly aggressively I think.
3. The gear change indicator wants me to shift earlier, if you have the auto or if it beeps when it wants you to shift, this could be annoying.

All in all im happy with it, it drives almost the same as before but with "less" emissions.

If your fan is cutting in earlier it might tend to lead to EGR valve Problems.
There is no reason it should cut in earlier

EGR valves seem to be going wrong in a lot of cars that have had the fix.

Even VW are noticing a sharp rise in breakdown although denying it is related to emission fix.
