I'm aware the Golf has 10ps more than the Cupra but was wondering why the Golf uses a 7-speed automatic whereas the Cupra uses a 6-speed automatic?

The 7 speed is the latest flagship dsg box, shown in the latest Golf R and the coming new polo GTI,

It'll be the next cupra that the new box filters down to it :)

Personally It's not bad having the 7 speed DSG compared to the 6 Speed. Currently gone from a 6 speed in a 184 FR TDI LEON to the Golf Mk7.5 R. Only problem is if using the paddles is your downshifting 1 more if needed. Also when planting the power down it can catch the DSG box out. Feels like it downshifts too much and revs the nuts off before upshifting. Maybe a software fix needed? Anyways it's not bad.

Do you prefer the 6 speed auto instead? I'm concerned it won't be as 'smooth and refined' as the 7 speed auto when in cruising speed but maybe I'm wrong?

It's horses for courses. The 6 speed I had was in a Diesel (TDI) and was good enough for the car. As for petrol the 7-speed I'm using in my Golf R petrol is handy. To be honest the only thing I see more is that in Sport/race mode it goes to S6 instead of in my 6-speed TDI only going to S5. Not sure how that would translate in the CUPRA 300 in Cupra mode?
I can presume the 7 speed makes the car more economical when in top gear. Although the golf R isn't the best economical car. So maybe why the Cupra still has the 6-speed at the moment?

I wouldn't out much stock in the 10ps more thing since VW are renowned for underselling their output. For example, on a rolling road my mate's Cupra 280 was pushing 300 stock.
