Take the voltage from the battery itself. There are some very strange terminals in the Leon fusebox. One shows 0 volts until a load is on it, even with the car off.
The sound system exceeds the output of the alternator, so the battery will be discharged due to the volt drop.
The readings you've taken are the energy recovery system working, so the battery is receiving a full charge voltage when throttle is off and the vehicle is slowing but only a trickle charge when open and the car is accelerating.
I'd recommend a weaker sound system, it'll save your hearing as well.
I would either put a second battery or take readings off the battery direct. As mentioned above modern cars have a lot of alternator management to save fuel etc.
To be honestly I wouldn't feel comfortable pulling that kind of load off my main battery.
