is it only the esp light or abs as well? Had this problem, which was cleared after cleaning rear wheel sensor. Should not have a problem driving the car thoiugh.
If only the ESP, it could be the steering wheel position sensor which do tend to go.
Yes, it will take a few 10-15 seconds above/below to pop limp mode. A 130 peaking at 30psi??? That is a bit much. a stock 130 should peak around 1.55-1.70bar max on overboost. 30psi is over 2 bar so either your meter is faulty or you might have a problem with the vnt mechanism.
There are quite a few places that do turbos, including allard (sell turbos and/ with custom maps). Turbo dynamics also do turbos. Remember that you are in very hot country so you need to also look after fuel, oil and intake temps (along with EGT temps).
On a diesel a fuel controller would be more appropriate...;)
The tuning boxs and evry mods basically do this (but without a knob in dash). It basically fools the ECU into injecting more fuel.
the sound will actually also depend on the remap...;)
If your running with the vnt.mech fully open the exhaust sound will be slightly different (deeper sounding).
boost is hardcoded in tables on ECU so I dought it will work unless you change codes and increase the +- deviation tables for limp mode.
BTW....Makes no sense
1st clean the contacts on wiring harness (left hand side of motor). If that doesn't work then swap the internal harness (runs under cam cover and is easily accessible). Not hard to do and also not expensive (around 70 euros).
The cable comes with all conections/connectors so pretty easy to do.

if going full out for sometime it could actually me positive boost deviation (+0.3 bar boost more than requested). Usually happens on very hot days during long runs. high boost with higher than usual intake temps will make the boost creep up over time.

chipping the car will get you more speed, but not really that much. without increasing top end breathing (probably with a bigger turbo) and a special map for more top end rpm, your not going to get much.
Pretty sure suspension is the same as the early golf 3. IIRC FK make some lower springs 60/40 or there abouts. If you need a strut brace, I've got a brand new one for sale in the for sale section (old post)..:whistle:
