I'm doing the cambelt on my Leon FR TFSI in a week or so. As I understand it the 6x crankshaft pulley bolts should be replaced as they are stretch bolts.
I was assuming they would be readily available online but I can't seem to find them.

well I just meant I don't want to lower it a silly amount with really stiff suspension. I don't want it exactly standard but just a little bit stiffer and slightly lowered.

I do a 40 mile round trip on the m62 every day to work so it gets a good run all the time. I'm not a believer in keeping a cars RPM low all the time, think it does more bad than good never revving about 2.5k. Just end up with carbon build up driving like that.

soft road tyres will be fine. Really any tyre that's not a cheapo chinese thing or knackered is fine. Just that the proper track tyres such as 888s and A048s make a huge difference.
Given it's your first track day I'd not worry about tyres too much as long as you have some decent ones...

Awesome GTI in Manchester, or there's Darkside Developments over t'hills in Barnsley. Darkside specialise in diesels. Neither are cheap but will do proper jobs with rolling road set up if you want it.
they'll just do it by the method the Seat factory manual tells them. They're not interested in trying to figure out quicker ways of doing things. Especially if there's a chance of damaging or breaking something by stretching behind the door card.
