Just an update on this, I changed the thermostat for a second time and that fixed the problem. Car gets up to temp now and the gauge stays at around 90.
I currently drive a TFSI Sport and over the past month my water temperature has been dropping whilst driving downhill. The car gets up to temperature quickly and sits around 92 degrees, but when driving downhill this drops to around 80. I've changed the thermostat and the Coolant Temperature...
On the way home from work tonight I noticed my tfsi sport wasn't boosting correctly, if at all, and had a hissing noise from around 2500rpm. I'm still on the original OEM diverter valve so I'm guessing (and hoping) that's the issue. Is that what it sounds like?

Waved goodbye to the Cupra today after over 3 years of ownership, just wanted to say thanks to everyone on SCN for all the help and advice over the past few years, it's been a really useful resource through the time I had the car. :thumbup:

Not a lot to look for really, it'll still be under warranty so that should cover any problems with it, just make sure it's in good condition.
