Quickest way is to put the torque wrench on the bolt on a realtively low setting then turn and increase the torque until it cracks off..simples
Be careful - "Breakaway torque" is NOT the same as fastening torque.

MK4 Ibiza 3 door - the Mk 5 is very similar design.
Strut clamp bolt 60Nm + 1/4 turn
lower hub swivel bolt - 20Nm + 1/4 turn
3 bolts for balljoint - 20Nm + 1/4 turn
Rear shock
lower bolts - 40Nm + 1/4 turn
Rear shock upper mount bolts - 30Nm + 1/4 turn
Strut top centre bolt - 60Nm
3 top mount bolts - 15Nm + 1/4 turn
Rear caliper carrier bolts - 30Nm + 1/3 turn
