I have a very annoying rattle on the rear door drivers side on my mk3 FR. I want to sort this out (for my sanity) but I'm unsure how people go about doing this. Is there a specific technique/product or is it good old duct tape and cardboard shims? :D

I usually pull the covers off the offending area and jiggle things underneath while listening for a similar rattle. Then I cable tie loose wiring or stick it down with double sided 3M tape.
It can be soul destroying trying to stop rattles.

PS. Are you sure it's not the headrest? That was buzzing/rattling on mine.

Buy some 25mm x length (in metres you require) adhesive backed automotive felt tape from eBay or Amazon.

Place around plastic against plastic joints, and wrap around wiring looms that vibrate against other surfaces. Bottom of A-Pillars and transmission tunnel gets rid of lots of rattles.

As above, offending rattle may not be in the location you originally think.

If you are still under warranty, a competent dealer would know how to fit expanding foam stuff inside the doors to stop the rattling, plus it makes the sound from the stereo better too! This was my experience...depending on the dealer, you might end up with more rattles after...
