Apparently the fold when switched and dip on reverse can be reenabled using VCDS. Once I've got a couple of minor warranty issues sorted I'm planning on getting it done on mine.

I don't have a problem with the way they work. There is no reason why they should fold every time you get out of the car.

Why would you want them to fold when you have just parked in your drive?

An extra second or two pushing the lock button is hardly a big problem surely?

Mine is mostly parked in car parks (probably 2 or 3 a day) and my drive is pretty tight, so I fold them in all the time anyway. I won't say its the reason I bought the car, but it was a tick in a box.

It also makes me slightly paranoid that the instructions for closing the mirrors are disturbingly similar to the ones for turning off the internal alarm.

When you lock the car, don't let go and press again to fold mirrors. Just hold button down and as soon as mirrors start to fold, you can let go. This way the internal sensors will not be turned off.
