Just an update for anyone who has read this thread from start to end, I recently had an overheating problem again with the exact same symptoms as my initial post.
Having checked the water pump, thermostat, header tank cap and pipes for leaks etc without finding anything wrong, I took it to a garage to have the system pressure tested. Thankfully the headgasket was fine, and the culprit turned out to be a blocked valve in the bleeder bypass pipe that goes to the top of the header tank.
Using a picture I posted earlier (ignore the highlighted pipes), you can see the pipe in question going to the top of the header tank on right. Why on earth there is a valve in that pipe is beyond me, but the car heater is working again and it hasnt overheated so far:
