You're best off just fitting the 256mm vented rears from the Cupra R as they're a direct fit and won't cause any clearance issues.
The rear brakes do very little stopping on these cars anyway so to go any larger would simply be for aesthetics or cause braking imbalances if you're leaving the front set up as standard.

That's fine, that's what I was looking at but just wanted to make sure they fit under the standard cupra alloys like these

The biggest technically possible non-vented is 308x9mm two-piece rotor kit from ECS Tuning. Also non-vented: 280x9mm from Eurosport. 239x9mm from Octavia Mk1 4x4.

Vented: 306x22 mm (ECS or Tarox), 280x22 mm Eurosport, 256x22 mm Cupra R / TT Mk 1
