Mooing is the sound that the rear brakes make mainly when reversing slowly, it is due to a low frequency vibration, the damper assembly supresses this vibration.

Notice my handbrake arms are off their stop a bit and slight slack in the handbrake so deffo going to try this! Very helpful

Good idea, but, once you have the springs, before fitting them, remember to fully retract the pistons and clean everything up and lub the contact points of the pads in the bracket, then refit everything, fit the springs, - maybe slacken off the handbrake cable a bit, - then apply the foot brake about ten times to make sure the pistons are back out where they "want" to be, then with the foot brake still on, apply the handbrake firmly about ten times. The handbrake screw should now be in the correct position and the levers should now be back on the ends stops. If the handbrake cable is now too slack, readjust it again. The handbrake might take a few days to settle down and find its final position for the screw in the piston.
